ras el hanout is Arabic for top of the shop. It is often a bend of the best spices a spicer seller has in the shop.

Ingredients
  1. 2 teaspoons ground ginger
  2. 2 teaspoons ground cardamon
  3. 2 teaspoons ground mace
  4. 1 teaspoon cinnamon
  5. 1 teaspoon ground allspice
  6. 1 teaspoon ground coriander seeds
  7. 1 teaspoon ground nutmeg
  8. 1 teaspoon turmeric
  9. 1/2 teaspoon ground black pepper
  10. 1/2 teaspoon ground white pepper
  11. 1/2 teaspoon ground cayenne pepper
  12. 1/2 teaspoon ground anise seeds
  13. 1/4 teaspoon ground cloves
Instructions
  1. Mix 'em together

  1. could also include aniseed, dried galangal, and orris root

  1. 2 tablespoons ancho chile
  2. 1 tablespoon chipotle chile
  3. 1 tablespoon arbol chile
  4. 2 teaspoons pasilla chile
  5. 2 teaspoons cascabel chile
  6. 1 teaspoon guajillo chile
  7. 2 tablespoons toasted cumin
  8. 1 teaspoon smoked paprika
  9. 1 teaspoon mexican oregano
  10. 1 teaspoon ground black pepper
  11. 1 teaspoon garlic powder
  12. 1/2 teaspoon onion powder

  1. toast and blend all chilies without seeds and stems. Mix together all other ingredients
